We are a specialist foodservice supplier to the pastry and dairy trade, supporting pastry chefs, bakeries. We are now expanding into a full range of Italian cheese — bringing the same product knowledge and service standards that built our pastry business to restaurant and hotel kitchens. This is a newly created role at the centre of that expansion. You will open the Italian cheese range into the restaurant, hotel and bakery trade while continuing to look after a portfolio of established pastry chef accounts. Sales Manager/ Assistant Sales Manager Italian Cheese, Dairy & Pastry · Foodservice Purpose of the role To grow sales and margin across our chilled dairy, Italian cheese and pastry ranges by winning new HORECA accounts and developing existing ones. You will be chef-facing. Key responsibilities New business — restaurants, hotels and bakeries Open new accounts across independent restaurants, hotel kitchens, gastropubs, pizzerias, bakeries and craft patisseries within your territory. Build a working pipeline through self-generated prospecting: site visits, referrals, trade shows, industry networks and lapsed-account reactivation. This is a hunting role, not an order-taking one. Sell the Italian cheese range from the front, positioning provenance, grade, format and application against incumbent suppliers — and against price-led competitors where we win on quality and consistency. Account management — existing pastry and bakery customers Retain and grow a portfolio of established pastry chef and bakery accounts, protecting the relationships that underpin the business today. Cross-sell the cheese range into that base Commercial and operational Quote and negotiate pricing within agreed margin parameters; protect margin rather than discounting to close. Forecast volume by line and feed it into the buying and supply team, particularly for short-shelf-life and imported chilled cheese where availability and lead times are tight.
