The Bar Manager is responsible for the day-to-day operation of all assigned bars, ensuring exceptional guest experiences through operational excellence, outstanding cocktail execution, team development, and strict compliance with health, safety, and hygiene standards. Responsibilities Leadership and Guest Experience · Lead guest-focused bar culture and service standards · Ensure teams are trained, confident, and guest-focused · Oversee guest satisfaction and service quality Operational Management · Lead the daily operation of all assigned bars, ensuring smooth, efficient, and professional service. · Maintain a strong presence on the floor throughout service periods to support the team and engage with guests. · Ensure all beverage service follows Fairmont brand standards and departmental SOPs. · Monitor staffing levels, shift organization, opening and closing procedures, and operational readiness. · Ensure all bars remain fully prepared, clean, organized, and properly always stocked. Cocktail Quality & Beverage Standards · Maintain the highest standards of cocktail preparation, presentation, consistency, and speed of service. · Conduct daily quality checks on cocktails, garnishes, syrups, juices, ice, glassware, and mise en place. · Ensure all beverage recipes are followed precisely using approved specifications. · Support the implementation of new beverage menus, seasonal promotions, and product launches. · Monitor beverage quality continuously and implement immediate corrective actions when required. Team Training & Development · Lead ongoing bartender training to develop technical skills, cocktail craftsmanship, product knowledge, and luxury service standards. · Conduct regular practical assessments, coaching sessions, and performance feedback. · Mentor bartenders and supervisors to build a high-performing and motivated team. · Promote continuous learning and professional development across the department. Health, Safety & Compliance · Ensure full compliance with HACCP, food safety, hygiene, sanitation, and responsible alcohol service standards. · Conduct routine health and safety inspections across all bars. · Ensure equipment is operated safely and maintained correctly. · Maintain accurate records of cleaning schedules, temperature logs, and operational checklists. Guest Experience · Lead by example in delivering intuitive, personalized, and luxury guest service. · Resolve guest concerns professionally and efficiently. · Build relationships with regular guests and recognize guest preferences whenever possible. · Support the delivery of memorable beverage experiences and special occasions. Inventory & Cost Control · Maintain accurate beverage inventories and stock rotation. · Minimize waste through effective controls and operational discipline. · Ensure bars are adequately stocked while avoiding unnecessary overstocking. · Support monthly inventory counts and beverage audits. · Report breakages, losses, and operational discrepancies promptly. Collaboration · Work closely with Culinary, Restaurants, Stewarding, Purchasing, Engineering, Housekeeping, and Front Office to ensure seamless service delivery. · Support hotel events, promotions, VIP functions, and beverage activations. Professional Standards · Maintain exemplary grooming, professionalism, and leadership presence. · Lead by example in punctuality, accountability, and operational discipline. · Attend all meetings, briefings, trainings, and departmental communications. · Perform any additional duties assigned by Hotel Management.
