Responsibilities Assist the Dim Sum Chef in the preparation and timely production of all dim sum items to the highest quality standards Ensure consistency in taste, presentation, and portion control in line with Shang Palace standards Supervise and guide dim sum kitchen team, ensuring efficiency and teamwork Maintain strict hygiene, food safety, and sanitation practices in compliance with HACCP Monitor ingredient quality, stock levels, and minimize wastage Conduct quality checks on dim sum items before service to ensure excellence Ensure proper maintenance and usage of kitchen equipment, coordinating with Engineering when required Requirements Minimum 3 years of experience in Chinese cuisine, specializing in dim sum Prior experience in a luxury hotel or reputable Chinese restaurant preferred Strong knowledge of traditional and modern dim sum techniques Proven Supervisory and team management skills Detail-oriented with a passion for quality and consistency Ability to work in a fast-paced, high-volume kitchen environment Fluent in English; Mandarin/Cantonese is an added advantage Flexible to work shifts, weekends, and public holidays
